My banana loaf cake :)
Ingredients:
125g unsalted butter
150g caster sugar
1tsp vanilla extract
1 beaten egg
2 mashed bananas (Preferably very ripe to have strong banana flavour)
190g self raising flour
60ml milk (I didn’t add milk since I found it made cake soggy)
Recipe:
Preheat oven to 150°C
Grease and line a loaf tin
Melt butter, sugar and vanilla essence in a saucepan over medium heat (Do Not Boil!)
Add egg and mix well (Wait for mixture to cool enough so egg will not scramble once added)
Stir in flour (If lumps form use an electric mixer)
Pour mixture into tin and bake for 35mins (Time may vary depending on oven, keep checking until cake in a golden brown colour and skewer comes out clean)
